But Asamoah Gyan replied just three minutes later, heading in Steed Malbranque's cross.
Jordan Henderson then gave Sunderland the lead as a fine run beyond three men yielded a crisp finish beyond Ali Al-Habsi.
Stephane Sessegnon added a third from the penalty spot after being pulled down by Antolin Alcaraz before Henderson cracked home number four.
Franco Di Santo pulled a goal back in the final minute, but the reply didn't take any of the sheen off a blistering second-half performance by the hosts.
